A nutritious sweetener processed painstakingly from freshly harvested coconut sap at early mornings (3 to 5 am), to preserve its natural sweetness. As the sap crystallizes into sugar granules, it transforms into 89% invert sugar with a Glycemic Index of 35, hence classified as a Low GI food.
Coconut sugar also contains 12 of the essential vitamin B complex and 5 micronutrients vital for body metabolism. Being so natural and organic, with a low GI food, it is suitable for everyone, even for diabetics!
The sweetener comes from the coconut sap which is obtained from tender, unopened inflorescence or spadix. It is a sweet, oyster white, translucent and neutral in PH. It has a sucrose content of 165 grams per liter which is rich in sugars, amino acids esp. glutamic acid and vitamins. Each tree can yield up to 3 liters of coconut sap per day.
